Cuban summer sippers

This light and refreshing summer beverage has a taste reminiscent of really good limeade. Beer kicks it up in flavour, making it a treat for grown-ups.

Preparation time 5 minutes plus 45 minutes cooling and chilling 

Cook time under 5 minutes

Serves 2

  • 50 ml (1/4 c) sugar
  • 50 ml (1/4 c) water
  • 45 ml (3 tbsp) lime juice
  • Crushed ice
  • 125 ml (1/2 c) lemon-lime soda
  • 1 bottle (250 ml/1 c) cold beer
  • Lime slices (optional)1. In a small pot, heat the sugar and water over high heat, stirring, until the sugar dissolves. Transfer the mixture to a heat-proof pitcher or bowl with a spout and let cool for 15 minutes. Transfer to the refrigerator and chill until cold, about 30 minutes.
    2. Remove the sugar mixture from the refrigerator and stir in the lime juice.
    3. Fill two tall glasses with ice and divide the sugar mixture between them. Pour 50 millilitres (1/4 cup) of the soda into each, then top off each glass with half of the beer. Add lime slices, if using.

If you'd like to make this more of a cocktail than a light beverage, add 25 millilitres (five teaspoons) light rum to each glass before adding the sugar mixture.

Iced tea-ade

When the weather is hot, some folks cool off with iced tea, others with lemonade. Here, both favourites are combined into one fabulous summer drink.

Preparation time 10 minutes plus 1 1/2 hours chilling

Cooking time 20 minutes 

Serves 8

  • 8 orange pekoe tea bags
  • 2 L (8 c) simmering water
  • 1 can (355 ml/12 ounces) frozen lemonade concentrate, thawed
  • Lemon wedges (optional)Combine the tea bags and water in a large heat-proof pitcher or bowl with a spout and let stand 20 minutes. Discard the tea bags and stir in the lemonade. Transfer to the refrigerator and chill 1 1/2 hours. Pour into eight glasses over ice to serve. Add lemon wedges, if using.

Ingenious!

  • Make a quick recipe even less work.
  • Combine the tea bags, cold water and unthawed lemonade concentrate in a large pitcher and put it in the refrigerator.
  • Let it steep at least four hours.
  • Discard the tea bags, give it a stir and serve.
