Honey-mustard turkey burgers

Next time you're hankering for a burger, try this turkey burger. A little low-fat mayonnaise helps keep the patties moist, while mustard and honey perk up the flavour.

When shopping for ground turkey, check labels. Regular ground turkey, made from breast and leg meat (and often skin), is almost as high in calories and fat as extra-lean ground beef. Ground turkey breast, on the other hand, is truly lean.

Serves 4

  • 50 ml (1/4 c) coarse-grain mustard
  • 30 ml (2 tbsp) honey
  • 7 ml (1 1/2 tsp) Worcestershire sauce
  • 450 g (1 lb) lean ground turkey breast
  • 15 ml (1 tbsp) low-fat mayonnaise
  • 1 garlic clove, minced
  • 2 ml (1/2 tsp) salt, or to taste
  • 1 ml (1/4 tsp) freshly ground pepper
  • 4 whole wheat hamburger rolls, split
  • Optional garnishes: lettuce leaves, sliced tomato, sliced red or sweet onion, ketchup, reduced-fat mayonnaise
  1. Stir the mustard, honey and Worcestershire sauce together in a medium bowl. Reserve 30 millilitres (two tablespoons) of this mixture to use as glaze. Add the ground turkey, mayonnaise, garlic, salt and pepper to the mustard mixture remaining in the bowl. Mix with a potato masher. Divide the mixture into four portions, then form each one into a one-centimetre-thich (1/2-inch-thick) patty.
  2. Preheat the grill to medium-high.
  3. Lightly oil the grill rack by rubbing the surface with a piece of oil-soaked paper towel. Grill the patties for four minutes. Turn the patties over and brush the cooked sides with the reserved glaze. Cook for four minutes. Turn the patties over and brush again with the glaze. Cook until the juices run clear and an instant-read thermometer inserted in the center registers 70°C (165°F), two to four minutes longer. Just before the patties are cooked, place the rolls, cut side down, on the grill until lightly toasted, 30 to 60 seconds. Place a patty on each roll and garnish as desired. One serving is one patty and one roll.
