A recipe for sherry-infused chicken livers with mushrooms and beans

Ingredients:

  • 225 g (1/2 lb) chicken livers
  • 1 onion
  • 45 ml (3 tbsp) olive oil, divided
  • 2 cloves garlic, crushed
  • 5 sage leaves, shredded
  • 325 ml (1 1/3 c) small mushrooms
  • 325 ml (1 1/3 c) frozen green beans
  • 30 ml (2 tbsp) dry or medium sherry
  • Grated zest of 1 lemon
  • 60 ml (4 tbsp) chopped fresh parsley
  • 4 lemon wedges, to garnish

Instructions:

  1. Remove any tough white parts from the chicken livers and cut them into bite-sized pieces. Slice the onion. Heat 15 millilitres (one tablespoon) of the oil in a large frying pan over high heat. Add the onion, garlic and sage, reduce heat to medium and cook for five minutes, or until softened.
  2. Cut the mushrooms in half and add them to the frying pan. Cook for three minutes, then add the frozen beans and cook, stirring, for another three minutes, or until the beans are hot and most of the juice from the mushrooms has evaporated.
  3. Push the vegetables to one side of the pan and add the remaining oil. Add the chicken livers and cook over medium heat for two to three minutes, turning until they are firm and cooked.
  4. Stir in the sherry and lemon zest and simmer for one minute. Sprinkle with parsley and garnish with lemon wedges.
